I have a love of a Tex Mex fast food place called Salsas. They are incredible! I love that all their bowls are gluten free and full of fresh yummy ingredients. The thing is that they are really pricey! One bowl (with no chips or drink) is $11.95. So for myself and my partner to go get food from a food court we are looking at $30+ which is frankly just stupid to spend that money to eat in a food court.
As some of you may have already read, I plan to be thriftier this year and have decided to make a Salsas bowl at home for a fraction of the price!
So here’s what is in my super tasty, healthy salad bowl:
Enough chopped romaine lettuce to cover the bowl by an inch or two
100g cooked chicken
Capsicum (I think Americans call this something else… pepper?)
1 small diced tomato (with seeds removed)
Guacamole (1/2 mashed avocado with salt, pinch of Cajun spice, and squeeze of 1/4 lime)
Mango salsa (1/2 mango diced, 2-3 tablespoons of diced pineapple, finely diced onion to taste)
