I have been experimenting in the kitchen this afternoon and have come across a fantastic new creamy chicken salad recipe… best part? Its a healthy, clean, and versatile recipe!
This is something that could be a sandwich or wrap filling, or even served on top of a bed of greens for a light, filling lunch.

Clean, creamy chicken salad recipe: 

Ingredients:

2 cooked and shredded chicken breasts
1 cup chopped cherry tomatoes
3 stalks chopped celery
1/2 cucumber, chopped

Dressing:

1/2 cup Greek yoghurt (I used 0% Chobani Greek yoghurt)
1 tablespoon sour cream (may exclude if you wish- still very yummy without)
1 mashed avocado
Juice of half a lemon
Salt to taste

Combine all the dressing ingredients and mix into salad. Simple!

Being a salad that you can add the lettuce to when serving, this is a fantastic dish to make ahead to serve at a
social event.
